Spoiler: your favorite dessert can have 39g of protein per 100g. Four ways to transform CORIAL Protein Pancakes into guilt-free desserts.
For years, "healthy dessert" was a euphemism for something that looked good but wasn't fun at all. CORIAL Protein Pancakes have 39g of protein per 100g, are sweetened with natural dates, and the batter is versatile enough to transform into filled crepes, tortes, mug cakes, and tiramisu — without an ingredient you can't pronounce.
The product — CORIAL Protein Pancakes
The obvious choice for desserts. Rich, intense, irresistible. Ideal base for stacks and tiramisu.
3 tricks before you start
For stacked desserts, use less liquid than indicated. A denser batter creates pancakes with a cake-like texture — ideal for stacks with fillings.
A tablespoon of pure cocoa powder transforms CORIAL Chocolate Chip Pancakes into a brownie base. No one can resist.
For thin crepes: medium-high heat and a very hot pan. For fluffy dessert pancakes: medium heat with a lid — the steam creates a softer and more uniform texture.

4 desserts. One batter.
- 100g CORIAL Chocolate Chip Pancake Mix
- 120ml milk or plant-based drink
- 2 tbsp peanut butter
- 1 tbsp pure cocoa powder (unsweetened)
- 3 tbsp hot milk (for the sauce)
- A drizzle of honey or maple syrup
- Fleur de sel (for finishing)
- Mix the CORIAL mix with the milk. Use less milk for a denser batter.
- Cook 3 small pancakes in a non-stick pan, medium heat, 2 min per side.
- Sauce: mix the cocoa powder with hot milk and honey. Stir until smooth and shiny.
- Stack the pancakes with peanut butter between each layer. Drizzle with cocoa sauce and a pinch of fleur de sel.
- 100g CORIAL Apple and Cinnamon Pancake Mix
- 180ml milk (more liquid = thinner crepes)
- 150g fresh ricotta
- 1 tbsp honey
- 1 tsp lemon zest
- 100g sliced apple
- Fresh mint (for garnish)
- Mix the CORIAL mix with milk until you have a very liquid batter. Cook 4 thin crepes in a hot pan.
- Cream: whip the ricotta with honey and lemon zest until smooth and airy.
- Spread the ricotta cream in the center of each crepe. Add sliced apple.
- Fold into quarters or roll up. Serve 2 per serving with more apple and mint leaves.
- 50g CORIAL Vanilla Pancake Mix
- 60ml milk or oat drink
- 1 tsp vanilla extract
- 1 tsp coconut oil (or mild olive oil)
- 10g chopped dark chocolate (70% cocoa)
- Peanut butter (topping)
- In a large mug (min. 350ml), mix all ingredients with a fork until lump-free.
- Add the chopped dark chocolate and fold into the batter.
- Microwave for 90 seconds. The center should be slightly moist — it will cook with residual heat.
- Wait 1 minute. Add a spoon of peanut butter on top and eat directly from the mug.
- 200g CORIAL Chocolate Chip Pancake Mix
- 240ml milk (for the batter)
- 200g mascarpone (or cream cheese)
- 150g natural Greek yogurt
- 2 tbsp honey
- 100ml cold espresso coffee
- Cocoa powder for dusting
- Prepare 8 thin pancakes with the CORIAL mix and milk. Let cool completely.
- Cream: whip the mascarpone with Greek yogurt and honey until you have a smooth and airy mixture.
- Lightly dip each pancake in cold coffee — a quick pass, don't soak.
- In individual glasses or a dish, alternate: pancake → cream → pancake → cream. Dust with cocoa. Refrigerate for 2 hours before serving.
One batter, four desserts: chocolate stack (10 min), ricotta crepes (15 min), mug cake (3 min), tiramisu (20 min + chill). The dessert protein you never expected to need.
