For years, "healthy dessert" was a euphemism for something that looks good but is no fun at all. Yoghurt with fruit. A square of dark chocolate. Nothing wrong with that β but we can do better.
CORIAL Protein Pancakes are technically a breakfast item. But the batter is versatile enough to be transformed into filled crepes, tarts, mug cakes and even tiramisu. With real protein, sweetened with natural dates, and without a single ingredient you can't read aloud.
3 tricks before you start
- Thicker batter = fluffier. For stacked desserts, use less liquid than indicated. A denser batter creates pancakes with a cake-like texture β ideal for stacks with fillings.
- Add cocoa to the batter. A tablespoon of pure cocoa powder transforms CORIAL Chocolate Chip Pancakes into a brownie base. Nobody can resist.
- Temperature matters. For thin crepes: medium-high heat and a very hot pan. For fluffy dessert pancakes: medium heat with a lid β the steam creates a softer, more uniform texture.

Recipe 1 Β· Pancake Stack with Dark Chocolate Sauce

Three layers of protein pancakes, filled with peanut butter and topped with hot cocoa sauce. A dessert that takes 10 minutes to make and looks like it took much longer.
Ingredients (1 serving):
- 100g CORIAL Chocolate Chip Pancake Mix
- 120ml Milk (or plant-based drink)
- 2 tbsp. Peanut butter
- 1 tbsp. Pure cocoa powder (unsweetened)
- 3 tbsp. Hot milk (for the sauce)
- A drizzle of Honey or maple syrup
- To taste. Sea salt flakes (for finishing)
Preparation:
- Mix the CORIAL mix with the milk. Denser batter than usual β use less milk if necessary.
- Cook 3 small pancakes in a non-stick pan over medium heat, 2 min per side.
- For the sauce: mix the cocoa powder with the hot milk and honey. Stir until smooth and glossy.
- Stack the pancakes with peanut butter between each layer. Drizzle with cocoa sauce and a pinch of sea salt.
π‘ Level up: Add a banana cut in half and grilled in the pan for 1 minute β it caramelises naturally and is amazing. All the sweetness is natural, with no added sugar.
Recipe 2 Β· Crepes Filled with Ricotta and Apple Cream

Thin, elegant, and absurdly easy. CORIAL Apple & Cinnamon Pancakes are rolled with ricotta cream and fresh fruit. Looks like a restaurant. Takes 15 minutes.
Ingredients (2 servings):
- 100g CORIAL Apple & Cinnamon Pancake Mix
- 180ml Milk (more liquid = thin crepes)
- 150g Fresh ricotta
- 1 tbsp. Honey
- 1 tsp. Lemon zest
- 100g Apple
- To taste. Fresh mint (for garnish)
Preparation:
- Mix the CORIAL mix with the milk until you get a very liquid batter. Cook 4 thin crepes in a hot pan.
- For the cream: beat the ricotta with honey and lemon zest until smooth and airy.
- Spread the ricotta cream in the centre of each crepe. Add sliced apple.
- Fold into quarters or roll. Serve 2 per serving with more apple and mint leaves.
π‘ To prepare in advance: Crepes can be stored in the fridge for up to 2 days. Store the cream separately and assemble just before serving β it tastes just like freshly made.
Recipe 3 Β· Vanilla Protein Mug Cake in 90 Seconds

10 pm, craving something sweet, don't want to turn on the oven. Solution: mug cake with CORIAL Vanilla Pancakes, ready in 90 seconds in the microwave. Warm, fluffy, and with real protein.
Ingredients (1 mug):
- 50g CORIAL Vanilla Pancake Mix
- 60ml Milk (or oat drink)
- 1 tsp. Vanilla extract
- 1 tsp. Coconut oil (or mild olive oil)
- 10g Chopped dark chocolate (70% cocoa)
- To taste. Peanut butter (topping)
Preparation:
- In a large mug (minimum 350ml), mix all ingredients with a fork until there are no lumps.
- Add the chopped dark chocolate and fold into the batter.
- Microwave for 90 seconds. The centre should be slightly moist β it will continue to cook with residual heat.
- Wait 1 minute. Add a spoonful of peanut butter on top and eat directly from the mug.
π‘ Attention: Each microwave is different. If yours is more powerful, start with 70 seconds. The secret is to stop before it's completely dry.
Recipe 4 Β· No-Bake Pancake Tiramisu

Yes, you read that right. Tiramisu. With protein pancakes instead of ladyfingers. Same logic β layers of cream and coffee β but with much more protein and no Monday guilt.
Ingredients (4 servings):
- 200g CORIAL Chocolate Chip Pancake Mix
- 240ml Milk (for the batter)
- 2 Eggs
- 200g Mascarpone (or cream cheese)
- 150g Natural Greek yoghurt
- 2 tbsp. Honey
- 100ml Cold espresso coffee
- To taste. Cocoa powder for dusting
Preparation:
- Prepare 8 thin pancakes with the CORIAL mix and milk. Let cool completely.
- For the cream: beat the mascarpone with Greek yoghurt and honey until you get a smooth and airy mixture.
- Lightly dip each pancake in cold coffee β a quick pass, don't soak.
- In individual glasses or a dish, alternate layers: pancake β cream β pancake β cream. Dust with cocoa. Chill for 2 hours before serving.
π‘ Caffeine-free version: Replace coffee with coconut milk and a spoon of cocoa. It's just as good and you can serve it to the whole family.
