Most protein pancakes hide an ingredient list that requires a magnifying glass to read. We found out why — and why CORIAL pancakes are formulated differently.
If you follow the functional food industry, you know that many protein bars, cookies, and pancakes are overly sweet — not just from sugar, but from the sweeteners that make them palatable. Aspartame, acesulfame K, erythritol, maltitol... the list is long. And then there's the protein issue: most use whey, because it's cheap and has an excellent amino acid profile. But not everyone digests lactose well — and many consumers prefer alternatives. In this article, we explore why the industry works this way, and why CORIAL protein pancakes are formulated differently.
1. The problem with conventional protein pancakes
Sweeteners: the taste trap
A protein pancake without sugar or sweeteners would have a neutral or slightly bitter taste. Manufacturers have two options: use sugar — which contradicts the proposed "low-carb" value — or use synthetic sweeteners to achieve the expected taste.
Some sweeteners like erythritol and xylitol have documented gastrointestinal side effects, especially in amounts over 20g. And although EFSA has approved aspartame and acesulfame K for safety, many consumers prefer to minimize their consumption.[1] A study published in Nature (Suez et al., 2022) demonstrated that sweeteners such as saccharin and sucralose alter the gut microbiome and glycemic response in humans, even at doses considered regulatory safe.
The industry reality: it's easy to make a mixture delicious with sweeteners — and much harder without them. CORIAL made the conscious decision not to use sweeteners in its protein pancakes. The result is a more natural flavor profile — less "dessert," more real food.
Whey protein: efficient, but not always ideal
Whey protein (derived from milk serum) is the standard choice in functional products for economic and nutritional reasons: complete amino acid profile, low cost at industrial scale, and high protein content with low volume. But it has disadvantages that many manufacturers undervalue:
- Contains lactose — frequent digestive discomfort
- Artificial sweeteners to compensate for taste
- Ingredient list with 20–25 components
- "Supplement" taste — artificial, cloying
- Documented potential impact on the microbiome
- Lactose-free — egg protein base
- No artificial sweeteners
- 8–10 recognizable ingredients
- Balanced natural flavor
- Nutritional profile compatible with the microbiome
2. How CORIAL pancakes are different
No sweeteners: honest taste
CORIAL Protein Pancake Mixes have 38–39g of protein per 100g — qualifying as "high in protein" under European legislation — without using artificial sweeteners. The taste is clean and balanced, without the artificial sweetness that characterizes most functional products on the market.
CORIAL Protein Pancakes qualify for the following claims under Regulation (EC) No 1924/2006 and Regulation (EU) No 432/2012: "High in protein" (≥20% of the energy value from protein); "Protein contributes to the maintenance and growth of muscle mass"; and "Protein contributes to the maintenance of normal bones". CORIAL is committed to scientifically and regulatorily validated claims — not vague language like "superfood" or "good for muscle gain."
Egg protein + wheat: natural formulation
Instead of isolated whey, CORIAL uses whole egg protein combined with wheat flour. This choice offers a set of advantages that whey cannot match:
- ✓ Excellent digestibility — egg protein has a PDCAAS of 1.0 and DIAAS of 1.13, comparable or superior to whey in protein quality, without the lactose tolerance issues.
- ✓ Lactose-free — no dairy-derived allergens. Suitable for those with intolerance or sensitivity to dairy products.
- ✓ Recognizable ingredients — an ingredient profile that anyone can read and understand, without needing a food additive dictionary.
- ✓ Authentic texture — the egg + wheat combination produces a texture closer to traditional pancakes, with complex carbohydrates that provide more sustained energy release.
Clean Label: know the ingredients
The CORIAL formulation contains approximately 8–10 ingredients — all recognizable. There are no synthetic thickeners, no laboratory emulsifiers — just real ingredients. A clear contrast with competing products that can have 20–25 ingredients, many of them food additives that require a magnifying glass to decipher.

3. Practical ideas: how to use CORIAL pancakes
Mix the batter with milk (or another suitable beverage), stir well, and cook in a non-stick pan. Finish with fresh fruit, peanut butter, or honey — according to your macros.
Make the pancakes, cut them into pieces, and layer with CORIAL Protein Oats and Greek yogurt. Result: 35–40g of protein with varied textures.
If you're in a hurry, a single pancake plus a CORIAL collagen coffee is already a solid base — ~20g of protein in less than 5 minutes.
4. Nutritional claims: what can be communicated
Unlike many products on the market that use vague language or unapproved claims, CORIAL focuses on regulatory transparency. CORIAL Protein Pancakes formally qualify for the following claims under European legislation:
- "High in protein" — ≥20% of energy from protein (Regulation EC No 1924/2006)
- "Protein contributes to the maintenance of muscle mass" — EFSA approved claim
- "Protein contributes to the growth of muscle mass" — EFSA approved claim
- "Protein contributes to the maintenance of normal bones" — EFSA approved claim
Claims such as "good for muscle gain," "boost your workout," or "superfood" have no regulatory basis in the European area and are not used by CORIAL. The brand's communication is based exclusively on claims formally approved by EFSA — out of respect for the consumer and current legislation.
5. Why this matters
The growing trend in the functional food market is clean label — consumers who want to know exactly what they are eating. Protein pancakes without sweeteners, with an egg and wheat base, satisfy this demand better than mixes built around whey isolates and sensory additives.
It's not just a nutritional choice — it's a choice of transparency and quality. It's the difference between a product that looks functional and a product that actually is functional.
The pancakes that do what they say — without hiding anything
Quality egg protein, no whey, no artificial sweeteners, in three flavors. Ready in under 10 minutes. Fits any time of day — breakfast, snack, or light dinner.
Conclusion: simplicity as a differentiator
In a market saturated with products with unreadable ingredient lists, choosing a protein pancake without sweeteners, with an egg and wheat base, and only 8–10 ingredients is, in itself, a statement of values. CORIAL believes that functional nutrition doesn't have to be complicated — or hide what it contains.
Fewer ingredients, more clarity. No sweeteners, no whey, no compromises.
